Delicious Salmon Pesto Foil Packs

30 MINUTE FOIL PACK MEAL!!! EASY CLEAN UP!!! GREAT FOR LEFTOVERS!!!

How can we not love 30 minute meals!! This salmon pesto foil pack meal is perfect for easy week nights or fancy weekend dinners. With minimal ingredients and quick clean up. It is the perfect blend of seafood meets Italian! Basil pesto sauce is a great addition to the dish due to its healthy ingredients. It is made of olive oil, pine nuts, garlic, and parmesan cheese. These are considered healthy fats (unsaturated) fats. Salmon offers a great source of protein and heart healthy omega-3 fatty acids. I make this dish quit often and it is a hit among my family. Salmon seems to be a fish kids love!

4 servings ( 4 foil packs) 

First you want to preheat the oven to 400 degrees F. Then rinse and snip the ends of the green beans. Boil the green beans in a pot for about 4-5 minutes. While those cook cut the tomatoes into halves and toss with olive oil, salt, and pepper to taste. Rinse the salmon and pat dry. Season with salt, pepper, and garlic salt to taste. Set these aside for later.

Once the green beans are done drain the water from the pot and salt and pepper the green beans to taste. Cut 4 pieces of foil into 16inch long pieces. Lay the green beans evenly in the center of the pack (divide the green beans into 4 equal sections). Place the salmon on top of the green beans in the center. Press down slightly to create an even surface.

Spoon the pesto sauce onto the salmon spreading it out with the spoon. The pesto has a great rich flavor so you do not need too much per foil pack. Evenly distribute the pesto sauce between the 4 pieces of salmon. Add the tomatoes on top with the sliced side facing upward. use the rounded part of the tomato to stick into the pesto sauce. distribute the tomatoes evenly between the 4 salmon pieces. If the top of the salmon fills up just throw the remaining tomatoes into the packs. The tomatoes cook and become so juicy and sweet. This goes great with the green beans and adds to the Italian taste. Last but not least squeeze the fresh lemon juice over the entire foil pack. Yum right?! I bet your mouth is watering just thinking about it! 🙂

Fold the foil packs by folding each side upward and across the other side making a rectangle pouch. Place packs on a flat baking sheet and bake at 400 degrees F for 25-30 minutes to preference. I took my packs out at 28 minutes and they were perfect. I like my salmon cooked through without it being watery or slimy. I like my salmon pink and flakey.

Ingredients:

4 5 Oz salmon cuts

1 pint grape tomatoes, halved

1 1/2 lb. fresh green beans

5 tsp fresh lemon juice

5 tbsp. basil pesto sauce

2 tsp olive oil

Salt, pepper, and garlic salt to taste

Instructions:

  • Drain the water from the pot and salt/pepper the green beans to taste.
  • Cut 4 pieces of foil into 16inch long pieces. Lay the green beans evenly in the center of the pack (divide the green beans into 4 equal sections). Place the salmon on top of the green beans in the center. Press down slightly to create an even surface.
  • Add the tomatoes on top with the sliced side facing upward. use the rounded part of the tomato to stick into the pesto sauce.
  • squeeze the fresh lemon juice over the entire foil pack.
  • Fold the foil packs by folding each side upward and across the other side making a rectangular pouch.
  • Place packs on a flat baking sheet and bake at 400 degrees F for 25-30 minutes.
  • Serve in the pack or on a plate and enjoy!

  1. I love salmon and this definitely looks like something I want to try. The fact that it looks non-messy is an added advantage. It could serve as a complete meal in itself, but is there any particular side you think would go best with it?

    1. Hi, Thank you for the reply. I plated mine with a Caesar salad. The whole pack slid off nicely onto the plate so the meal stays intact. The green beans, fish, and salad made it a great meal. I also tried asparagus instead of green beans and that was great also!

  3. I love salmon, and I love pesto – but I don’t think I’ve ever had the two together! I usually just use pesto for pasta, and haven’t experimented with it much 😦 this recipe has definitely given me “food for thought” 😉 x
